Berfend BER - Şalgamın anavatanı Tarsus ilimizdir. Ermeniler tarafından ilk olarak yapıldığı söylenmektedir. Tarsus'a patentlenmiş şalgam suyunun nüfusundan dolayı Adana'da çok tüketilmesiyle Adana ilimize ait olduğu bilinir. Ülkemizin Adana yöresinden öncesi Güney Doğu ve Doğu Akdeniz bölgesine has bir içecek olmuş, sonrasında tüm Türkiye'ye buradan yayılmıştır. Türk insanının turşu ve turşu suyuna olan düşkünlüğünde damak tadımızla tümden bütünleşmiştir. Adeta ayran gibi milli içececeğimiz haline gelmektedir. Şalgam suyu Adana ve Tarsus'ta sadece şalgam diye söylenmekte olup kebap yemekleri birlikteliğinde vazgeçilmez bir içecektir. Adana ve Tarsus'da özellikle dört mevsim sokak satıcıları tarafından satılmaktadır.
Şalgam Turpgiller ailesinden olan Şalgam bitkisinden yapılmaktadır.Şalgam suyu, mor havuç ve mayalanmış bulgurun suya salınması ve tuzun ilavesi ile laktik asit fermantasyonuna tabi tutulmasının sonucu oluşan kırmızı renkli, bulanık, ekşi lezzetli fermente bir içecektir.
Birinci aşama; ekşi maya, tuz ve su ile karıştırılarak bulgurun hamur haline getirilmesidir.
İkinci aşama; bulgurun su ile ekstaraksiyonu sonucu elde edilen sıvının dilimlenmiş şalgam ve kırmızı havuç ile fermantasyonudur.
Şalgam suyunun hücre yenileyici özelliği vardır.

Although its Turkish name salgam suyu (or shortened, salgam) does literally mean "turnip juice", it is, in fact, the juice of purple carrot pickles, heavily salted, spiced and flavoured with aromatic turnip (salgam) and fermented in barrels. It is traditionally served cold in large glasses with long slices of pickled carrots, called tane. Hot paprika relish is added just before drinking. Hot or regular, it's a popular drink with Adana Kebab.
History of Turnip ; Juice Turnip is a 4000 years old root crop first cultivated by early European settlers. Mainly appreciated for its medicinal properties rather than the taste, turnip juice in is quite popular. Salgam,a beverage that was originated in Adana, a Turkish city, emerged as a healthy and flavorful spiced drink.
Preparation and Serving; of Turnip Juice The juice of turnip extracted for medicinal purpose has different preparation technique than the one prepared in Turkish cuisine. Following are the two methods used for making this beneficial drink:
Turnip Juice
It is advised to select firm and fresh turnips for extracting juice. The electric juicer can be used for best results. Washed and peeled turnip is sliced before putting in the juice, a few slices at a time for processing efficiency..Once the juice is extracted, it is required to be strained in order to remove the pulp. Once the juice is strained it should be consumed at once as storing may spoil its taste. Recommended for blending with magnesium-rich juices which facilitate the effective absorption of potassium present in it by the human, it is mixed with parsley and cabbage juices to make a healthy drink.

Salgam Sayo
It is a Turkish beverage prepared with the pickled black carrots which are juiced for making the beverage. Turnips are especially fermented in barrels to be used for flavoring the salgam.
The serving of this popular beverage is done with ‘dene’, a long sliced pickled carrots. Large glasses are particularly used to serve this drink chilled. A special ingredient, hot paprika relish, is fondly added to the drink just before serving. ‘Adana Kebab’ from Turkish cuisine tastes best with salgam.
Salgam sayu, a replacement of raki, an anise-flavored Turkish drink , is advised to b
